内容記述 | 少子・高齢化の進展の下で我が国の食料消費構造がどうなるのかを明らかにするため,家計調査の食料支出30分類全体にわたって,家計の1人当たり消費に影響を及ぼす要因として,出生年の違いによる「コーホート効果」,加齢に伴う「加齢効果」,時代の変化による「時代効果」の3つを取りあげ,さらに,価格と消費支出を加えて,過去におけるこれらの要因の分析を行い,これを基礎として,一定の仮定のもとに将来の消費を展望した。 その結果,これまでの消費の変化には,概してコーホート効果と時代効果の影響が大きかったことが明らかになった。これらを踏まえ,また,消費支出の一定の伸びを見込んで将来を展望すると,今後とも生鮮品から加工品へ,また,内食から中食へのシフトが進み,食の外部化が一層進むという結果となった。 |
