| 内容記述 | 少子・高齢化の進展の下で我が国の食料消費構造がどうなるのかを明らかにするため，家計調査の食料支出30分類全体にわたって，家計の1人当たり消費に影響を及ぼす要因として，出生年の違いによる「コーホート効果」，加齢に伴う「加齢効果」，時代の変化による「時代効果」の3つを取りあげ，さらに，価格と消費支出を加えて，過去におけるこれらの要因の分析を行い，これを基礎として，一定の仮定のもとに将来の消費を展望した。 その結果，これまでの消費の変化には，概してコーホート効果と時代効果の影響が大きかったことが明らかになった。これらを踏まえ，また，消費支出の一定の伸びを見込んで将来を展望すると，今後とも生鮮品から加工品へ，また，内食から中食へのシフトが進み，食の外部化が一層進むという結果となった。 |

| 内容記述 | To clarify the Japanese food consumption structure in the future under the falling birthrate and aging population, we developed a model to explain each household’s per capita food expenditure in terms of the“ cohort effect,” which arises from the difference in the birth year; the “age effect,” a product of coming of age; the “period effect,” which stems from the passage of time; “price”; and “consumption expenditure.” Using the model, we elucidated the factors behind changes in food consumption in the past, and projected the future change in food expenditure for all 30 food items classified in the Family Income and Expenditure Survey. As a result, it became clear that for many items, the cohort effect and period effect had an obvious influence on household food consumption. On the basis of these findings and assuming a certain growth in consumer spending, we predict the shift in consumption from fresh products to processed products, from at-home cooking to purchasing cooked food or home meal replacements, so that the dependency of our diet on food industries will progress. |
