| 内容記述 | 本稿では，主要野菜の品目別・用途別需要を粗食料ベースで推計し，①主要野菜の用途別需要においては，加工・業務用需要が過半を占め，しかもその割合が増加していること，②この加工・業務用需要の増加は輸入品利用の増加と結びつきながら進行していること，等を明らかにした。 このような状況の下，今後，野菜の自給率を向上させていくためには国内産地の加工・業務用需要対応を強化していく必要があるが，そのためには従来型の家計消費用を前提とした生産・供給の延長では不十分である。なぜなら，家計消費用と加工・業務用とでは，実需者から求められる基本的特性が異なるからである。たとえば，品質内容について，家計消費用では特に外観が重視されるのに対し，加工・業務用では用途に応じて求められる特性は多様である。また，取扱形態をみると，家計消費用では原体（ホール）での流通が基本であるが，加工・業務用においては，原体での流通もみられるものの，前処理や一次加工された形態での仕入が特徴となっている。 国内産地においては，家計消費用とは異なる加工・業務用需要の基本的特性や品目ごとの輸入の特徴等を念頭に置き，低コスト化はもとより，用途別ニーズに対応した品種・規格等による生産や産地間リレーによる周年安定供給等に取り組む必要がある。 |

| 内容記述 | In this study, the demand by intended purposes of major vegetable items was estimated. As a result, the following points were clarified. First, in the major vegetable items, the ratio of demand for food processing and food services (catering and ready-to-eat meals industry) has a majority, and it has been increasing. Secondarily, an increase in this demand is proceeding while relating to the use of imports. Under such a situation, it will be necessary to strengthen the correspondence capabilities of domestic production for food processing and services demand to improve the rate of self-sufficiency of vegetables. However, the conventional production-supply correspondence required for household consumption is insufficient for that. Because, the main characteristics required for household consumption and for food processing and services are different. For instance, as for the point of the content of the quality, the characteristics required according to the usage are various in food processing and services while externals are valued in household demand. Moreover, when the handling form is seen, the purchase in preprocessed form is a feature for food processing and services while the distribution in a whole form is basic for household consumption. Therefore, it will be needed not only the low-cost production but also the production by the varieties and the specifications corresponding to needs according to the usage and the year-round stable supply by the relay between production regions, etc. in the domestic production. |
